Iguana, iguana. If you’re along the Wasatch Front here in Utah, “iguana” probably brings to mind Mexican food because we’ve got two Mexican restaurants in Salt Lake City with the name iguana: Blue Iguana (featured here) and Red Iguana.
Blue Iguana is located in downtown Salt Lake and is a colorful sit-down restaurant with both inside and outside seating. It is in a basement location, so the inside is a little dim (hence, my grainy cellphone pics), but still cheerful and fun. I just love the blue cups, don’t you? Oh, and look at that beautiful wood-beamed ceiling! The menu has many options including several of their classic moles, which I was going to order, but if you know me, you know I have a hard time not ordering seafood…and I caved again.
Chips & Salsa – Good salsa is a must and this one was great with nicely balanced tomato and fresh cilantro flavors. It had a perfect texture…not too thick or too thin.
Shredded Beef Burrito with Refried Beans & Rice – Tender beef that was extra flavorful. The refried beans and rice were average, but we loved having the piles of pico and guacamole on the side.
Seafood Enchiladas – These were loaded with lots of fish, shrimp, & scallops in a nice white sauce and cheese. They were so good. Some restaurants overload their seafood enchiladas with sour cream (ick!), but not here. The sauce was really flavorful.
Salt Lake has definitely got Provo beat with Mexican restaurant options. Blue Iguana is a good choice when you’re downtown. The atmosphere is cozy, the food is good, and the service is, too. In addition to the Salt Lake location, there is also a Park City restaurant.
