Eat In Recipe: Simple Salsa Chicken

Four ingredients…yep, four (unless you include the rice)…and none of them are salsa.  This recipe is really simple, and it’s one of those meals that’s been a staple in our house for years.  It’s one of those meals you can make in a flash with ingredients that you may have sitting around in your pantry & freezer.  It’s so simple that I don’t even have the recipe written down anywhere.

The chicken turns out saucy, a little spicy, & a little sweet.  You can control the level of sweetness & spiciness by increasing or decreasing the ingredients to your taste.  We serve it over rice, but you can also use it in a wrap, over spaghetti squash, or alongside your favorite cornbread.  You could also dress it up with other ingredients you have on hand:  a little green onion, some shredded cheese, a little cilantro…use your imagination!

Chicken Salsa

Simple Salsa Chicken
1 lb. boneless, skinless chicken breasts, cut into bite sized pieces
1/4 c. taco seasoning
1 (14.5 oz.) can diced tomatoes
1/4 c. apricot preserves

  1. Put chicken in a bowl or bag and combine with taco seasoning, mixing until chicken is evenly coated. 
  2. Preheat large nonstick skillet over medium heat.  When hot, cook chicken until lightly browned (3-5 minutes), stirring frequently.
  3. Add tomatoes, including juice.  Then add apricot preserves, stirring until they are melted & incorporated.  Reduce heat and simmer for 5-10 minutes.  Serve over rice.
