Eat In Recipe: DP Chili

Chili with Dr. Pepper and cocoa powder.  Intriguing, huh?  I ran into this recipe on the awesome blog Sweet Basil and I knew I had to make it! 

Turns out it’s easy to make and wonderfully delicious in the way that only chili can be.  It’s slightly spicy and has a satisfying sweetness (but not overly so) from both the Dr. Pepper and cocoa powder.   I loved finding the chunks of sweet peppers in my bowl, too, which added some variety of both texture and color. 

We ate this with and without toppings, and it was great both ways, but I just loved a little dollop of sour cream to balance it out just a tad.  If you’re a chili-lover, give this new recipe a try…and then come back and thank me.  (Amazing Diner isn’t much of a chili fan and I’m figuring Little Diner isn’t, either…yet.)

DP Chili from Sweet Basil
2 T. canola oil
1 large yellow onion
3 cloves garlic, minced
1 each red, yellow, & green bell peppers, minced
1 lb. ground turkey
1 T. chili powder
1 heaping T. cumin
1/4 tsp. cayenne (or more to taste)
1 tsp. oregano
1 T. unsweetened cocoa powder
1/2 tsp. allspice
1/4 tsp. thyme
1 12 oz. Dr. Pepper
1 tub Knorr Homestyle Chicken Stock
2 T. tomato paste
1 can, pinto beans, drained
1 can tomatoes for chili (or Mexican-style tomatoes)
sour cream, cheese, green onions etc. for serving

  1. In a heavy bottomed pot, add the oil and heat over medium heat. Add the onion and sauté until tender, about 5-7 min.
  2. Add the garlic, stirring everything together to not burn the garlic, and cook until fragrant, about 1 minute.
  3. Add the minced bell peppers and sauté for another 2-4 minutes or until the peppers are tender.
  4. Add the ground turkey to the pot and cook through until almost cooked through, about 5-6 minutes. Dump all of the spices over the meat and quickly stir it all in. Let the spices cook onto the meat for 1-2 minutes.
  5. Add the Dr. Pepper, tomato paste, and Knorr stock. Stir until the tub of stock and paste have dissolved.
  6. Add the pinto beans, and tomatoes and turn the heat down to a simmer.  Simmer for 30 minutes to all day. The longer it simmers the better the flavor.
  7. Serve with sour cream, grated cheese, green onions, and chips.

Review: Cedar’s Hommus

I must admit that I am a dip-lover.  You may have guessed it if you’ve read my proclamations of my love for salsa and guacamole.  I also love creamy dips for chips & vegetables and those yummy puddles of oil or vinegar for my bread.  And over the past ten years I’ve developed a love for hummus.

One of the other great things about hummus is that I don’t feel quite so guilty eating it since it is a decent source of protein and fiber.  Hummus is made primary from chickpeas with the addition of other ingredients for various flavors.  My favorite is generally Roasted Red Pepper.  Yum.

Cedar’s Mediterranean Foods sent me five coupons to try their products for free.  I was so excited and checked out their website.  I had tried their hummus before and was interested in the many other products they listed on their website including yogurt dips, salads, feta cheese spreads, and more.  However, when I searched my local stores, I only found their hummus, so I snatched up five different flavors to try.  (In case you’re wondering, hummus and hommus are the same thing; just different spellings.  Cedar’s uses the spelling “hommus” in their title.)

First, I popped open my go-to flavor:  Roasted Red Pepper.  It had that sweet red pepper flavor that I love.  The center of some of the Cedar’s hummus dips have a little topping that corresponds to the flavor variety, so in this case, there was finely chopped roasted red pepper in the center.  Getting a sampling of that on my chip was even tastier!P1040975

After satisfying my palate with the Roasted Red Pepper, we moved on to the Artichoke Spinach.  It was tasty, but a little bland after the Roasted Red Pepper.  The Artichoke Kalamata was a lot more flavorful with a slight bitterness from the Kalamata olives.  It was a chunkier hummus with many pieces of olives mixed into the hummus.  We really enjoyed it.

Next up was the Roasted Garlic flavor, which was overpowering before we even tried it.  As soon as the lid was off, the room became fragrant with the smell of garlic.  I tried just a bit, and noticed a very strong garlic flavor.  I love garlic, but I was a little worried about smelling like garlic the rest of the day, so I didn’t sample the minced garlic topping.  Amazing Diner loved the garlic one and declared it his favorite. 

The final flavor was the Roasted Pine Nuts, which had a subtle flavor, but a pleasant one.  It had that subtle nuttiness that was enriched every time I got a bite of the actual nuts in the topping.  I enjoyed the nuts so much that I would love to have more of them. 

We found six flavors of Cedar’s Hommus at our SuperTarget (the other flavor was Original) for about $3.50 each.  They are great with pretzels, chips, pita chips, vegetables, and more.  If you’d like to try Cedar’s, check out the coupons on their website and like their Facebook page for more information.

Food Holiday: International Pancake Day & Pancake Week

Did you know that virtually every day is a food holiday?  How awesome would it be to celebrate each of those days with it’s own special food?!  Alas, for me that is a bit impractical. 

Today is International Pancake Day and this week is Pancake Week.  As easy as it would be to make pancakes today, it didn’t happen this morning and there are other plans for dinner tonight.  So, in celebration of Pancake Day, I’m sharing some of my favorite Pinterest finds.  Enjoy!  Oh – and if you want a great syrup recipe to go with your pancakes, check out our post on Buttermilk Syrup – yum!

Eat Out Review: Chili’s

Chili's Chips and Salsa2Even though they have a big red & green chili as their signature logo, I can’t help but think of chips & salsa every time I think of Chili’s.  They really got theirs right on the mark.  I know I’m going to be ordering their bottomless chips & salsa before I even set foot in the door of that place!

Our most recent visit was on a weekend evening.  We called ahead to get on the waiting list (I love that feature!) and found the place packed to the hilt with people waiting.  Even with calling 20 minutes ahead, we waited about 25 minutes after we arrived when their quoted wait was less than five.  It really irks me when the quoted wait is substantially off the actual wait time…especially when you have squirmy and hungry kids with you!

Once we were seated, service was much better.  We ordered the expected chips and salsa ($3.09).  The chips are so light, warm, & perfectly salted.  They go well with their awesome salsa.  For $4.99, you can get both salsa and their incredible Fire-Grilled Corn Guacamole served with chips.  The guacamole is awesome:  sweet & crunchy with the buttery goodness of avocado.  The chips don’t do quite as well with dipping into the guac; they are a bit fragile & sometimes break, but don’t let that stop you from ordering this amazing sensation if it strikes your fancy.  Love it.

I love the variety of Chili’s menu.  They’ve got a little bit of everything – oh, and Noteba-by back ribsNote.   I just wish they had them on the kids’ menu ‘cause Amazing Diner is always so excited about them that we order the half rack with fries ($9.99) for him.  C’mon, Chili’s, put some ribs on the kids’ menu!  This time was no exception; Amazing Diner ordered the half rack (don’t worry there were more fries than pictured), and says, “I highly recommend the baby back ribs if you go there.”  Sweet Diner & Little Diner both ordered Cheese Pizzas ($4.59).

Mr. Diner chose the Country-Fried Steak ($11.09) served with mashed potatoes and corn on the cob.  It was huge and could have easily been split into two portions.  If you like country-fried steak, they make a good one, and the mashed potatoes are fantastic with little bits of skin left in for extra authenticity.

I ordered the Quesadilla Explosion Salad ($9.39) with some added avocado.  The salad has chicken, cheese, tomatoes, a corn & black bean relish, cilantro, & tortilla strips and is served with a sweet-tart citrus-balsamic dressing and little cheese quesadilla wedges on the side.  It’s a great salad, and easy to see why it’s they’re most popular, but I think the addition of the avocados only enhances it even more. 

For those who can find something they want on the 2 for $20 Menu, it’s a great option.  It includes one appetizer and two entrees for $20.  Last time Mr. Diner & I tried it, we ordered the guacamole (with salsa & chips), the Classic Bacon Burger, & the Honey-Chipotle Chicken Quesadillas (which I couldn’t find on the menu anymore, but they were good!).  With most of the entrees priced around $10, it’s about like getting a free appetizer.  And, yes, the Baby Back Ribs are available as a 2 for $20 entrée.

We enjoyed the food, but will really try to avoid the crowded weekend dinner rush here – even when we have called ahead.  Of course, there is a great take-out menu that you can even order from online.  Haven’t tried doing it yet, but it’s a great option for those who want to enjoy Chili’s without the crowds.

Eat Out Review: Malawi’s Pizza

How many restaurants can you not only enjoy the food, but know that your meal is not only feeding yourself, but is also feeding a child in Malawi?  Only one that I know of:  Malawi’s Pizza.  For every meal purchased, they donate a meal to feed a child in Malawi.  Such a fantastic idea!

We arrived at Malawi’s and joined the line to order (you order at the counter, find a seat, and a server brings your order to your table identified by the little number you’ve placed in a holder).  They’ve got a nice assortment of tasty-sounding pizzas, pastas, salads, & dessert pizzas.  If you can’t decide, you can also get a combo meal:  full pizza with a half salad for $14.50 or a half salad with a half portion of pasta for $10.95.  The menu features a nice selection of unique pizzas with the more traditional favorites like Pepperoni, too.

Mr. Diner chose the Meat Safari pizza ($9.95), which featured pepperoni, sausage, ham, & bacon.  I went for the Pesto Chicken ($9.95) with chicken, pesto cream, asparagus, spinach, & gorgonzola.  We found a table (difficult because it was a crowded Saturday night at the Riverwoods) and filled up our drinks at the fountain drink station.  It was a reasonable wait time for our meals to be delivered to the table and we enjoyed the fun atmosphere.  The décor is dark and African-inspired, but has plenty of light.  They also have several wall-mounted televisions showing various sporting events.

Their pizzas feature a very thin cracker-like crust, which we enjoyed.  It really highlighted the flavors of the toppings.  The weight of the toppings makes it difficult to pick up a slice until you’ve taken a few bites, so we ate the first few bites of each slice with a fork.  The toppings were of an excellent quality; everything seemed freshly prepared, which makes sense coming from the chef of one of my favorite restaurants (La Jolla Groves). 

The meats were flavorful on the Meat Safari, but there was little sauce or cheese.  I guess that helps keep the cracker-y crust crisp.  The Pesto Chicken has tender, thin slices of chicken with nice, crisp sections of asparagus.  I would have liked more pesto cream, since I think it probably evaporated in the oven.  I couldn’t taste much of it, but I still really enjoyed the pizza.  The gorgonzola cheese was very tasty with this combination of flavors.

I expected to take most of my pizza home (take-home boxes are available at the counter), but ended up eating almost all my medium-sized pizza!  I think because the crust is so light, it’s not as filling as a regular pizza (of which I usually only eat one or two slices). 

We’d love to go back to Malawi’s Pizza to try more.  I think next time I’d like to share a full pizza and half salad combo so we have room for a dessert pizza (they have six varieties!)and maybe some breadsticks!  I’m also intrigued by the newer Dijon Chicken pizza…mmmmmm.  For those who eat gluten-free, they have a gluten-free crust for $2.50 more.  A wheat crust is also available.

Eat In Recipe: Cilantro Lime Shrimp

Shrimp seems to be one of the love-it-or-hate-it foods.  I’m a huge shrimp lover and always have been, and this recipe is one of those really great shrimp recipes!  It’s got a great freshness from the cilantro and lime, and it’s got a slight spiciness from the red pepper flakes.  Not only that, but it’s versatile.  Eat it alone, over rice or pasta, in a tortilla, or on toasted bread.  It could be an entrée or an appetizer…or an all-day snack.  Yum!

Cilantro Lime Shrimp from Never Enough Thyme
1 T. butter
1 T. olive oil
2 cloves garlic, minced
1 medium onion, chopped
1 jalapeno, finely chopped
1/4 tsp. red pepper flakes
1/2 tsp. Mexican oregano
2 Roma tomatoes, chopped
1 lime, zest & juice
1/2 tsp. salt
1/2 tsp. black pepper
1 lb. shrimp, split & deveined
2 T. cilantro, chopped

  1. Melt the butter & oil in a heavy skillet over medium-high heat.
  2. Add the garlic, onion, & jalapeno.
  3. Cook, stirring until the onion begins to wilt, approximately 3 minutes.
  4. Add the red pepper flakes & oregano.
  5. Continue cooking until the onion becomes translucent, approximately 3 additional minutes.
  6. Add the tomatoes.
  7. Cook, stirring occasionally, until the tomatoes are soft.
  8. Add the shrimp, lime zest & juice, salt, & black pepper.
  9. Cook until the shrimp are just opaque.  Be careful not to overcook.
  10. Remove the pan from the heat and stir in the cilantro.

Notes:  I opted for just half an onion instead of a whole, and think it was plenty of onion.  The cooking goes quickly on this one, so have everything prepped & ready to go when you start!
