Happy St. Patrick’s Day to you!  And what better food holiday could be proclaimed for St. Patrick’s Day than National Corned Beef & Cabbage Day?  I actually like corned beef & cabbage, but Mr. Diner has never tried it & probably never will so we are not celebrating by making this traditional Irish dish tonight.  Are you?

  1. I like corned beef and cabbage is okay, but your posting of Apricot-Glazed Corned Beef w/Colcannon and Sauted Cabbage looks like something I'd love to try. I've made and enjoy Colcannon potatoes before--they have the cabbage mixed in with the mashed red potatoes. Thanks for all the variations on this duo of foods.
