I like corned beef and cabbage is okay, but your posting of Apricot-Glazed Corned Beef w/Colcannon and Sauted Cabbage looks like something I'd love to try. I've made and enjoy Colcannon potatoes before--they have the cabbage mixed in with the mashed red potatoes. Thanks for all the variations on this duo of foods.
