Eat Out Review: Costa Vida

Pin It! Mr. Diner and I went out for a quick lunch to Costa Vida.  I love all these quick casual Mexican restaurants with their delicious meats, rice, & beans assembled into delicious creations.  I’m generally partial to the salads while Mr. Diner often goes for a burrito.

This time, I chose the Raspberry Chipotle Chicken Salad with black beans and their creamy tomatillo ranch dressing.  The grilled chicken was flavorful, and paired with the raspberry chipotle, it was a smoky-sweet-spicy piece of paradise.  Loved it on the salad, but I’d happily eat those little strips of chicken on their own, too.

Mr. Diner took a step away from the norm and ordered the Sweet Pork Enchiladas with flour tortillas and a medium green sauce.  You know that sweet pork is good when he chooses that over beef!

At place like Costa Vida, you usually expect the service to basically end when you leave the counter, but we were politely asked twice whether there was anything the employees could do to help us while we were eating.  It was really nice to have them check up on us. 

Have to say that my favorite fast casual Mexican place is Café Rio, but when I want chicken, I’ll be going to Costa Vida.

Giveaway: Variety Case from Flavrz Drink Mix

Is the end-of-summer heat making you thirsty?  Whew!  It is around here!  That’s why the Flavrz Drink Mix packs looked so enticing to us when they arrived on our doorstep last week! 
The company generously sent us a bottle of Root Beer and pouches of Cherry Berry, Lemon Lime, Tropical, Superfruit Sport, Fruit Punch Energy, & Citrus Hibiscus Immunity.  Each drink mix can be added to sparkling or still water for your own flavored beverage made right at home.  The mixes are certified organic, low in sugar and calories (they contain agave nectar and stevia as sweeteners), and use natural ingredients.  You can even customize the amount of flavor you want:  sweet, light, or flavored water. 

We chose sweet for ours, which meant that one packet was mixed with 12 oz. of water or one 1/2 c. of the root beer flavoring was mixed with 1 liter of sparkling water.  It was really easy – you just pour the flavoring into the water, stir, & drink.  If we had one of those cool soda machines, we could use it in that, too!

The Tropical was everyone’s favorite with it’s fruity-coconut flavor.  Amazing kept saying, “Too bad we don’t have more Tropical” even hours after it was gone. All of us also liked the Superfruit and the Citrus Hibiscus.  Sweet Diner and I both found the Fruit Punch a little weak and slightly sour. 

I love that these have fewer calories and no artificial flavors or colors and that you can conveniently mix up a flavored drink wherever you are.  We liked the fruit flavors better than the root beer and I would definitely purchase our favorites again.  To find Flavrz at a store in your area, go here.  You can also purchase straight from them on their online store or buy from Amazon.

First, McDonald’s has released another coupon booklet for Back to School.  The booklets cost $1 and include 12 free product coupons:

I’ve had a hard time finding these booklets, so you may want to call around if you want them.  Fine print says you can only use one certificate per person per visit and that they are only redeemable by those 12 & under.

Eat In Recipe: Stuffed Pizza Rolls

Pizza recipes are always a hit in our house.  Everyone likes them, so I’m always trying new takes on pizza.  This recipe from Our Best Bites has been a popular one for a couple years now – one, ‘cause it’s just so darn easy; and two, ‘cause it’s so darn quick; and three, ‘cause everyone just loves it!  Perfect combination for a family dinner staple, right?

This time we made it with pepperoni, but our favorite toppings to stuff inside these little balls of dough are mini cubes of ham with little pineapple tidbits.  They’re a little more substantial than the pepperoni.  If you’re doing pepperoni, though, cut it up in quarters or get the super-cute mini pepperoni for this recipe.  It just fits better.  I do have to say, though, that the Chicken-Bacon combination mentioned on Our Best Bites sounds tasty.

Stuffed Pizza Rolls from Our Best Bites
1 tube refrigerated pizza dough, regular or thin crust (or make your own)
marinara sauce or pizza dough
2 T. Parmesan cheese
1 T. olive oil or melted butter
1/2 tsp. garlic powder
1 tsp. Italian seasoning
mozzarella cheese
Pizza toppings of your choice:  pepperoni, ham, pineapple, sausage, olives, etc.

  1. Preheat oven to temperature specified on dough package/recipe, usually 400 degrees.
  2. Unroll pizza dough on a floured surface.  Pat or roll until it’s about 12”x8”.  Cut it into 24 squares with a pizza cutter.
  3. Place cheese & toppings on each square (but not the pizza sauce – it’s for dipping!).  Just eyeball how much of each topping, keeping in mind you’ll need to enclose the toppings in the dough.
  4. Carefully enclose the toppings on each square by pinching the corners together and pressing the seams closed into a little ball.  Put all the dough balls into a greased pie pan or similar-sized dish.
  5. Brush the tops of the rolls with melted butter or oil, sprinkle with garlic powder and Italian seasonings, then with Parmesan.
  6. Bake in the oven for 10-20 minutes or until lightly browned.  Serve warm with pizza sauce.

Eat Out Review: The Roll Up

A frequent dilemma:  where to go for a Girls’ Night Out?  We love to go out for dessert and have our favorites, but this time we chose something new – The Roll Up.  Haven’t heard of it?  It’s a crepe restaurant along the south end of State Street in Orem.  It’s just a little place that’s easy to pass by, but as they say, “look for the giant owl.” 

Yes, a giant owl.  And that’s just the start of the owls.  There are little owls inside, too and a sculpted tree in the center of the dining area.  The place is quite quaint and has an intimate feel to it, though there are probably about a dozen small tables.

This is another casual place where you order at the counter and wait for your name to be called when your order’s up.  They have crepes of all kinds:  sweet, savory, breakfast, & custom.  They also have kids menu items at the reasonable price of $3 and soups for $3-4.  

The Roll Up Banana Foster Crepe

I ordered the Banana Foster crepe ($5) with brown sugar, butter, bananas, & a scoop of dulce de leche ice cream.  It was a delicious, warm & caramely banana creation.  Other friends tried the Apple Pie, Chocolate Lovers, Strawberries & Cream, & Turkey Pesto Cranberry, but I think the Banana Foster topped them all.  The Chocolate Lovers was a little over-chocolatey.  They have a daily special and on this day is was Peach Cobbler, a tempting choice. 

The crepes weren’t always carefully presented.  We had three or four Banana Foster crepes at our table and they all looked quite different, but I suppose that didn’t affect the taste. 

I have to admit I was a little disappointed that a couple items I had read about and wanted to try weren’t on the menu:  the Thai Chicken Curry and the Lasagna crepes.  I want to go back and try more, but these two options would just make my mouth water. 

The Roll Up is open for breakfast, lunch, dinner, & late night snacks (8 am-1 am M-Sat with shorter hours on Sunday (10 am – 6 pm).

We’ve posted a review before about Just Tomatoes, Etc. products.  Last time it was a review of Just Strawberries, Just Raspberries, & Just Corn.  We loved them!  They are delicious, nutritious, and convenient.  And they use no additives or sulfates!  This time, Just Tomatoes, Etc. has generously offered to sponsor this review and a great giveaway for one of our readers to enjoy!
They sent us 2 packages each of Just Fruit Salad, Just Tomatoes, and Just Peaches along with a recipe booklet of great recipes featuring their tomatoes.  We were quite excited to try everything! 
We tore into the Just Fruit Salad first.  It contains a variety of freeze-dried fruit including pears, apples, peaches, bananas, strawberries, & red grapes.  It’s a great snack mix with good fruit flavors.  Some of the fruits are crisp and crunchy and others are a little chewy.  I’m partial to the crisp & crunchy ones, myself.  This mix, like other fruit varieties, is great added to yogurt or cereal. 
Next we tried Just Peaches.  I am a huge fresh peach lover; Mr. Diner is not because of the texture of peaches, but was happy to sample the freeze-dried version.  The peaches have a great fresh peach flavor, but are quite crunchy.  Most of the pieces are the size of a typical peach slice, maybe an eighth of a peach.  I would prefer if they were sliced more thinly; the size makes them a little hard to bite into for kid-sized mouths.  Otherwise, they were great!
Last, we tried Just Tomatoes, which we were told were better as a recipe ingredient than as a snack.  We tried them as they were, anyway.  The tomatoes are dehydrated instead of freeze-dried.  I am not big on tomatoes, but these are quite good. They are flavorful and even on the sweet side.  I do agree that they are best as an ingredient, although they are not bad on their own, either.

The recipe booklet has some great ideas on how to use Just Tomatoes both dry and rehydrated.  We tried making Basil & Dried Tomato Pesto (shown above) and mixing the pesto with cream cheese to make a dip (shown below).  Both were excellent.  The company’s suggestion of using the dehydrated tomatoes as a chip substitute was a good one, too.  There are so many uses for their dehydrated tomatoes including sandwiches, soups, seasonings, and more.  These are perfect for adding to your favorite panini!

Eat In Recipe: Coconut Bread

I’ve been making this bread for over about a year now and it is so moist and delicious!  The recipe doesn’t have many instructions, so I’ve added a little bit of my own in there to help you out.  Also, I’ve thought this recipe would be even more delicious with a few tropical adaptations:  maybe the addition of banana or pineapple and the substitution of macadamia nuts in place of the walnuts.  This time I did add in the macadamia nuts, but I haven’t tried to add in the banana or pineapple yet.  Maybe next time…if I do, I’ll do an  update.  If you try it, let me know!

Coconut Bread Adapted from Taste the Joy
2 c. sugar
1 c. buttermilk
4 eggs
1 c. oil
2 tsp. coconut extract
3 c. flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1 c. coconut
1 c. macadamia nuts, chopped (or walnuts)

Glaze:
1 c. sugar
1/2 c. water
2 T. butter
1 tsp. coconut extract

  1. Combine sugar, buttermilk, eggs, oil, & extract.  Mix well.
  2. Add flour, baking soda, baking powder, & salt.  Mix well.
  3. Stir in coconut & macadamia nuts. 
  4. Pour into 2 greased loaf pans.  Sprinkle extra macadamia nuts and coconut on top, if desired.  Bake at 325 degrees for one hour. 
  5. To make the glaze, heat ingredients in a small saucepan over medium heat until sugar is dissolved.
  6. Cool bread for 10 minutes in pans, then remove. 
  7. Put loaves on a rack over wax paper to catch the extra glaze.  Poke holes in cake and pour glaze over, letting it soak in.  Pour more as it soaks in until it is all gone or glazed to your liking.

Notes:  I originally poured the glaze over the loaves while they were in the pan, which makes less of a mess and allows it to soak up all over the sides & bottom, but it makes it stick to the pans.

Grocery Bag: Chip’ins

I’ve seen Popcorn Indiana’s Chip’ins (about $4) on the shelves of the grocery store for awhile now, but haven’t tried them until now.  What are they, you ask?  Popcorn chips!  Popcorn Indiana has created a simple chip made from popcorn.  The ingredients listed for our Sea Salt variety:  Corn, Sunflower Oil, & Sea Salt!  Love simple ingredients! 

Sweet Diner loves popcorn, so I thought she would love these chips.  We all tried them and they are definitely popcorn-y.  The sea salt seems like just the right amount for me – not overpowering and letting the popcorn flavor come through.  The texture is crispy, but the whole thing reminds me a lot of a thinner version of a rice cake.  Amazing Diner, who until recently did not care for popcorn unless it was seasoned with ranch, surprisingly was the biggest fan of Chip’ins.  He said, “These taste so much like popcorn, you could just smash them up and serve them in a container while you watch a movie!”  I thought they were okay, but (sorry Amazing) I don’t think they’ll be served at our next movie night.  I just prefer regular popcorn or tortilla chips to this hybrid, however these are a great low-calorie alternative (only 120 calories for 20 chips…a larger serving than most chips).  What do you think?

It’s our first giveaway, generously sponsored by The Honey Company, a local Provo-based company that creates natural, raw, unfiltered honey!  The Honey Company is run by fourth-generation beekeepers Stan & Alicia Moulton.  They take the utmost care in creating a quality product that is good for you and good for the bees. 

The honey is not heated or homogenized, no water is added, and only one simple screen is used to filter the honey, resulting in honey that is as close to “straight from the bees” as you can get.  The Moultons also try to ensure that no pesticides are used anywhere near their bees.

The Honey Company provided a pouch of their Go Honey product for us to review.  Go Honey is creatively-packaged source in a 3.5 oz foil pouch that is lightweight, flexible, and securely resealable!  The pouches are sold as an alternative athlete energy source with instructions to consume 1/3 pouch with one cup of water.  However these pouches have a lot of other great uses:  travel, backpacking, emergency preparedness, and (my family’s favorite) eating it straight from the tube!

I have to admit:  I love honey, but I’m not one to just eat honey.  However, since we tried The Honey Company’s honey, I’ve been craving it and have sneaked back several times to eat mini spoonfuls of the stuff. 

We tasted our own normal honey side-by-side with Go Honey and the difference was significant.  The Go Honey had a more delicate flavor that was very pleasing and not as overpowering as the normal honey.  We really loved it!  The little diners are already asking me to buy more when we run out.
